Boiling soya chunks can affect their nutritional content, including protein. Here’s what you need to know:<div>
</div><div>Effect of Boiling on Protein</div><div>1. *Protein loss*: Boiling can lead to a loss of protein, especially if the cooking water is discarded.</div><div>2. *Denaturation*: Boiling can denature proteins, making them less accessible to enzymes and potentially affecting digestibility.</div><div>
</div><div>Factors Influencing Protein Loss</div><div>1. *Cooking time*: Longer cooking times can lead to greater protein loss.</div><div>2. *Water ratio*: Using excessive water can result in greater protein loss.</div><div>3. *Heat*: High heat can denature proteins, affecting their nutritional value.</div><div>
</div><div>Minimizing Protein Loss</div><div>1. *Optimal cooking time*: Cook soya chunks for the recommended time to minimize protein loss.</div><div>2. *Use cooking water*: Use the cooking water as part of the meal or broth to retain nutrients.</div><div>3. *Gentle heat*: Use gentle heat to minimize protein denaturation.</div><div>
</div><div>While boiling can affect the protein content of soya chunks, they can still be a nutritious and protein-rich food when cooked properly.</div>

Any heat treatment on soybean chunks doesn’t reduce its protein content but will also helps in elimination of soya antinutritive factors.

Boiling soya chunks does not significantly reduce their protein content.
