    During cooling and packaging, the key is preventing recontamination by using clean, dry (ideally filtered) air, avoiding condensation, removing and cleaning dust build-up in coolers/ducts/hoppers, separating clean vs. dirty areas, and applying validated sanitation. From a QC perspective, environmental swabbing at critical points helps verify control effectiveness.
