    Higher ttemperature:Faster ripening,Strong flavor,But risk of spiloge

    Lower Temperture:Slower ripening,milder flavor

    High humidity:Prevents drying,Supports proper texture and rind formation

    low Humidity:Causes excessive drying,cracks and poor texture
