The fundamental difference between single-screw and twin-screw extruders lies in their operating mechanism: single-screw extruders rely entirely on friction to push material forward, while twin-screw extruders use positive displacement via intermeshing screws to mechanically force material through the barrel.

Single-screw extruder:
Simple design (one screw), lower cost, suitable for uniform raw materials, but has limited mixing and control.
Twin-screw extruder:
Two screws, better mixing and cooking, handles a wide range of ingredients (high fat/moisture), offers better process control, but more expensive
