    When feed exits the extruder, the sudden drop from high pressure to atmospheric pressure causes a portion of the moisture to instantly flash into steam, resulting in product expansion. The remaining moisture must then be removed through controlled cooling and drying to reach a stable level, typically below 10%, to prevent spoilage.
