    Poultry processing involves several key operations to transform live birds into ready-to-sell meat products. The process includes the following stages:

    1. Pre-Slaughter Handling

    Catching & Transport: Birds are carefully caught, placed in crates, and transported to the processing plant.

    Holding & Resting: Birds are kept in holding areas to reduce stress before processing.

    2. Stunning & Slaughter

    Stunning: Birds are rendered unconscious using electrical stunning or gas stunning to ensure humane slaughter.

    Bleeding: The birds’ throats are cut to allow proper blood drainage.

    3. Scalding & Feather Removal

    Scalding: Birds are dipped in hot water (50-60°C) to loosen feathers.

    Plucking: Automatic machines remove feathers.

    4. Evisceration (Removal of Internal Organs)

    Head & Feet Removal: Heads and feet are cut off (sometimes feet are processed separately as “chicken paws”).

    Opening & Evisceration: A cut is made in the abdomen, and internal organs (intestines, liver, heart, etc.) are removed.

    Inspection: Organs and carcasses are inspected for quality and disease.

    5. Chilling

    Water or Air Chilling: Carcasses are rapidly cooled to prevent bacterial growth and maintain meat quality.

    6. Cutting & Deboning

    Whole chickens may be:

    Sold as whole carcasses

    Cut into parts (breast, drumsticks, wings, thighs)

    Deboned for boneless meat products

    7. Packaging & Storage

    Packaging: Meat is packaged in different forms (fresh, frozen, vacuum-sealed, or marinated).

    Labeling: Includes weight, expiry date, and other regulatory information.

    Storage: Products are stored in chilled or frozen conditions before distribution.
