    Excessive non-structural carbohydrates (NSC) in cattle feed lead to ruminal acidosis because the rapid fermentation of these carbohydrates by rumen microbes produces large amounts of volatile fatty acids (VFAs) and lactic acid, causing a significant drop in rumen pH.
