    Maize can be found in nature in many different colors ranging from white, yellow, orange, blue, purple, and blue (see attached pictures). In many cases the colors of kernels can be highly variable within a cob. Most maize produced around the world for human and animal consumption falls in one of two categories: white or yellow. Most of the white-colored maize is destined for human consumption whereas most of the yellow-colored maize is used to feed animals. The nutritional composition of white and yellow maize is identical. The color difference in due to the higher content of beta-carotene and xanthophyll like zeaxanthin and lutein in yellow corn.
