Some very good suggestions on ways to improve meat “quality”. I think Jeffery is correct when says “what part of quality do you want to improve” because there are many ways to describe “quality”. Certainly nutrition plays an important role in tissue/muscle building; genetics of the bird (fast growth vs slow growth); harvesting (slaughter) technique – presence or absence of a “cold-chain”. Even post-processing packaging can have a role in overall meat quality.

Good nutrition improves meat quality through regulating gut health (intestinal microbiota-muscle axis) and antioxidant status (scavenging free radicals)

This is an excellent question. There are many aspects of meat quality including food safety, presence of myopathies like white stripping and woody breast and others, water holding capacity, shelf life, improved nutritional characteristics for humans like high omega-3 fatty, and many more. Can you please share your definition of meat quality and what aspect of meat quality are you interested in improving?

Add natural antioxidants to the animal’s diet or directly to the meat. You can also add dietary fiber, plant extracts, and probiotics.

Improving meat quality in poultry involves a combination of genetic, nutritional, environmental, and management practices.
