The terms maturity and ripening are closely related in food science (especially fruits), but they are not the same. The difference mainly lies in timing and purpose.

Maturity is the stage when fruit has reached full size and is ready to be harvested, while ripening is the subsequent process where the mature fruit becomes soft, sweet, and palatable.

1. Maturity
Definition: The stage when a plant product (fruit, grain, etc.) has completed its growth and development.
At maturity, the item is physiologically ready for harvest.
It may not yet be ready to eat.
Example: A banana harvested green is mature, but not sweet.
2. Ripening
Definition: The process that occurs after maturity, where the product develops edible qualities.
Involves changes like:
Color (green → yellow/red)
Texture (hard → soft)
Taste (starch → sugar, sweeter)
Aroma development
Example: A green banana turning yellow and sweet.
